Philippe Auchère is a wine-grower in the town of Bué, a stone’s throw from
Sancerre.
He takes a responsible and natural approach to wine-growing: the vineyards
are maintained carefully with the aim of protecting the structure of the soil and
promoting biodiversity. Hoeing and mowing are the two methods he has chosen for the maintenance of his vineyards. Microtractors, which are lighter and more
energy-efficient than straddle tractors, are occasionally used to limit soil compaction, but also to reduce the CO2 footprint.
Self-taught and passionate about his work, he adapts to the specificities of each of his different vineyards in order to achieve each year the most beautiful harvest possible, when Mother Nature allows him.
Every year since he has started, Philippe has chosen not to yeast his wines. These all ferment in indigenous yeasts, naturally present in the juices.
The desire to be part of a responsible and ecological approach is present throughout the estate: Gaston, a pig, keeps the neighbouring undergrowth under control. Rasta, Rockett and Lola, who are Ouessant sheep, maintain the green spaces and, finally, a few hens take care of the slugs that would otherwise head straight for the vegetable garden.
