Ingredients (serves 4):
4 cuts (about 600g total) salmon
For the marinade:
100ml soy sauce
100ml white wine
4 slices of lemon
10ml cooking oil (such as sunflower oil)
50ml white wine (for cooking)
1. In a bowl, mix together the soy sauce, wine, and lemon slices.
Add the salmon and marinate for half a day to one day. (If the marinade does not completely cover the salmon pieces, you should turn them over 2 or 3 times while marinating)
2. Remove the marinating liquid from the salmon pieces by wiping them with a paper towel. Heat a frying pan over medium heat, add the oil and fry the salmon for about 1 minute. Add the white wine, cover with a lid and allow the salmon to steam in the pan for about 4 to 5 minutes. (Adding the lemon slices to the pan will give it even more flavor.)
3. Place the salmon on a plate and decorate with the lemon slices and chives.
4. With a red Coteaux du Giennois, the pairing will be wonderful!
