Happy Winter !
Winter is the celebrations period with the return of seafood and shellfish.
Oysters and seafood will be perfect with the young white wines (
Pouilly-Fumé or
Quincy). For hot oysters, we would prefer a white wine more advanced (one or two years).
Shellfish (crab, lobster) need, as far as they're concerned, white wines more complex (good year or old vineyard).
In entree, some eggs "à la couille d'âne" ("oeufs en meurette") will agree with blending wines (
Châteaumeillant and
Côteaux du Giennois).
A consommé of lentils or a calf head, also regional specialities, would rather relish white wines.
About the meat, it's time to heave a feast with a "coq en barbouille" (chicken cooked in blood) or a tail of beef with green lentils from Berry where the elegance of the red wines of
Sancerre, Menetou-Salon or Reuilly will find all its place.
At last, we can be surprised at the wedding of the foie gras and the white wines of our region. We would prefer the wines of a generous year and with some age.
Recipes cards (in french) are at your disposal at the BIVC office.
